  • It is officially spring in Chile and even though I am really far away and we are starting autumn I decided to tribute the spring and flowers, because it is my favorite season of the year and I am a bit nostalgic. Don’t get me wrong I love autumn as well, but spring has no contender.

    This tart is really simple to make and easy to prepare, and because it is filled with colorful flowers it makes anyone who sees is immediately happy, it is like an injection of energy. I added some red fruits when I served it and it made a really good combination.

    Orange blossom tart

    Preparation time: 1 hour
    Servings: 8 portions

    Ingredients

    Shortcrust base 

    • 225 g flour
    • 125 g butter
    • 80 g icing sugar
    • 3 egg yolks
    • 2 tsp vanilla extract
    • 1 tsp cold water

    Mascarpone and orange blossom filling 

    • 500 g mascarpone
    • 2 tbsp organic orange zest (no wax)
    • 80 g icing sugar
    • 3 tbsp orange blossom extract
    • edible flowers to decorate

    Preparation

    Shortcrust tart 

    1. In a bowl mix the sifted flour, the cold butter, the icing sugar, until it resembles crumbs. Add the eggs one at a time and the vanilla. It is possible to do it in a food processor. 
    2. At last, add the cold water until the dough comes together. 
    3. Splash some flour on a work surface, make a disc with the dough and cover with clingfilm, chill for an hour. 
    4. Preheat the oven at 170ºC, in between two papers roll the dough to 3 mm thickness and prepare a mold for the tart (I used 20 cm diameter) make some holes with a fork and refrigerate for 30 minutes.
    5. Put weight on top of the dough and bake it for 10 minutes, then take the weight off and keep baking it until it is golden brown. 

    Mascarpone orange blossom filling 

    1. While the tart is baking, mix the mascarpone cheese with the icing sugar, orange zest, and orange blossom extract.
    2. When the tart is ready to pour the filling up to the top and decorate with edible flowers and fruits if you want. Now, let us start enjoying the tart and let’s pretend we are in spring.
