  • Dulce de leche flan

    (Perfect for staying at home baking)

  • I am bringing you some recipes in times of pandemic (never thought I was ever going to write this) but that is our reality at the moment, and most of us are not supposed to be outside, so while we have to stay at home, let’s start baking all day!

    This is a very traditional South American dessert, my dad used to make this every time we had something special going on at the house. So I cant think of anything more special than a worldwide lockdown.

    If you don’t have dulce de leche, you can make it, the easiest way if you have a pressure pot is to put a can of sweet condensed milk under water and cook for 1 hour, 3 hours if it is not a pressure one. Then when you open you have this delicious dulce de leche (way better than the store-bought one)

    If not you could use the carnation one that it comes ready and in the case, you have none of these options you can make one at home from scratch, I am going to leave you this method in the recipe as well.
    So hope you enjoy and start baking at home because I can’t think of anything more comforting at these uncertain times.

    Dulce de leche flan

    Preparation time: 1 hour
    Servings: 8 portions

    Ingredients

    Flan 

    • 1/2 lt whole milk 
    • 200 g dulce de leche
    • 7 eggs 
    • 150 g light brown sugar 
    • 1 tsp vanilla extract 
    • 100 g caster sugar (for the caramel) 

    Dulce de leche 

    • 4 cups milk
    • 1 1/4 cups sugar
    • 1/4 teaspoon baking soda
    • 1 teaspoon vanilla

    Preparation

    Flan 

    1. In a pot warm the milk, without boiling, once it is warm, add the dulce de leche and mix, so there are no lumps.
    2. In a bowl mix the eggs, with the light brown sugar and vanilla. 
    3. Add the milk with the dulce de leche to the mix of eggs and whisk until it is all incorporated. 
    4. Prepare a mold and put caramel on top of it. To do this we are making dry caramel with the caster sugar. Put the sugar little by little in a pan until it caramelizes, once it is all caramelized we pour the caramel on the mold we are making the flan. 
    5. Pour the mix of the flan in the caramelized mold. 
    6. Put the mold in Bain Marie and bake at 160ºC for 40 minutes. You know it is ready when it still jiggles, but not around the edges. 
    7. Take out of the oven, let it cool down and leave in the refrigerator for two hours before unmolding, serve and enjoy. 

    Dulce de leche 

    1. Stir together 4 cups milk, 1 1/4 cups sugar, and 1/4 teaspoon baking soda in a 3- to 4-quart heavy saucepan. Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until caramelized and thickened, about 1 1/2 to 1 3/4 hours. (After about an hour, stir more often as milk caramelizes, to avoid burning.) Stir in 1 teaspoon vanilla.
    2. Transfer to a bowl to cool. Makes about 1 1/2 cups.
